Never Bashful with Butter



First off, I’d like to offer my most sarcastic apologies to those of you who might have been expecting a Halloween themed post here at Never Bashful with Butter, but considering I didn’t do anything Halloween themed, I couldn’t exactly post about it.

On the other hand, I did make a gigantic batch of HUGE oatmeal chocolate chip cookies for my husband to bring to work with him.

So how about I post about those, instead?

There is definitely something to be said about a nice warm oatmeal chocolate chip cookie. I personally can’t resist them, so I did sneak a couple before my husband whisked them off to work.

These cookies in particular, are extra special. Why? because they’neverbashfulwithbutter.comhttp://www.neverbashfulwithbutter.comre made with half whole wheat flour, oatmeal, and… ta-DAH!!!!


They’re Vegan!

(They’re VEGAN!)

Here’s the recipe*-

3/4 cup (Earth Balance) Margarine
3/4 cup packed brown sugar
1/2 cup granulated sugar
1/4 cup blended silken tofu
2 tsp vanilla
1 tsp cornstarch
1/2 cup all-purpose flour
1/2 cup whole wheat flour
2 1/2 cups oats
1 1/2 cups (Tropical source) dairy free chocolate chips

Cream together the “liquid” ingredients until light and fluffy. In a separate bowl, sift together the dry ingredients minus the oats and chocolate chips. Combine the two mixtures, adding extra flour as necessary until the dough is firm. Stir in the chocolate chips and oats as the last step.

Refrigerate for about an hour. Drop dough by heaping spponfuls onto greased baking sheets. Bake at 350°F for 12-15 minutes or until light golden.

Ok, so.. I didn’t have any soy/almond/rice milk handy when I took the photo… so.. Vegan cookies by regular milk for irony! haha..

They’re especially tasty about 2 minutes after they come out of the oven. Sooooo good, and I’m not even vegan! Psst.. don’t tell the husband’s co-workers either.. I didn’t tell him they were vegan. *smile*

* you can also make the non-vegan version of these cookies using butter instead of margarine, and an egg instead of the tofu and cornstarch, and regular old chocolate chips will do in place of the vegan ones listed.
